Sour Projects

I've been brewing sour beer since the end of 2010, beginning with my lambic solera. It's an ongoing project but not the only sour brewing going on in my house. It can get unwieldy trying to track down posts that my span months at a time on a single project and go on for years so I have tried to collect them together in these subpages. These are the most interesting and extensive of the ongoing/past projects.

  • Lambic Solera: A solera-style lambic refilled each December. It is an interesting adventure with each year's beer completely different from the last.
  • Spontaneous Fermentation: Started early 2014, this is a completely spontaneous beer, cooled in open containers outdoors. It's a strange brew.
  • Sour Mash/Sour Wort: A collection of resources and recipes I wrote about souring beer pre-boil. Although I sour most of my beer post-boil these days, it is still a process that I roll out when I need some tartness in a beer. With the recent revival of berliner weisse, pre-boil souring methods are also seeing a revival.
